Just for something different, I recently decided to experiment with making my own chowder. The recipe, followed by some feedback from my guinea pig friends, is what follows.
Prep time: 20 minutes
Cook time: 4 hours
Ingredients:
1 carton (32 oz.) Reduced Sodium Crock Pot Vegetable Broth
1 package crock pot savory herb chicken seasoning mix
1 ½ lbs red potatoes cut into ½ inch pieces
2 cups frozen corn, thawed
2 stalks celery, chopped
1 small onion, chopped
1 ½ lbs shrimp, peeled, deveined and coarsely chopped
2 cups milk or half & half
Directions:
Add broth, seasoning mix, potatoes, corn, celery, onion to slow cooker.
Cover and cook on high 4 to 5 hours or low 7 to 8 hours or until shrimp and milk or half & half and cook 30 minutes or until shrimp turn pink
****Substitute 2 cloves chopped garlic, ½ tsp dried thyme leaves and ½ tsp salt for seasoning mix.
Makes 6 servings!!!!
Grace T. and Alyssa M. tried the chowder and had a few thoughts.
Alyssa said, “I really liked it and I'd make it if I could cook.”
Grace told me, “It was okay. I'm. Not fond of shrimp but it was amazing otherwise.”
Bon appetit!
